Coziest Bean Stew

This cozy vegan sausage, potato, bean and kale soup is perfect for a nourishing lunch of dinner. Fast and easy.

Equipment

  • large soup pot

Ingredients

  • 3 Tbsp extra virgin olive oil
  • 5 cloves garlic chopped
  • 1 small onion diced
  • 3 cups vegetable broth
  • 3 Tbsp nutritional yeast
  • 1 bay leaf
  • 1 cup potato diced
  • 1 carrot chopped
  • 1 vegan sausage, sliced optional
  • 1/2 bunch kale chopped
  • 12 oz navy beans canned
  • 1/4 tsp black pepper
  • cayenne to taste optional for heat

Instructions

  • Add olive oil to soup pot. Turn heat to medium. When oil is hot, add garlic and onion. Stir and saute for a minute or two.
  • Add in the broth, yeast, potato, carrot, vegan sausage and bay leaf. Bring to a low boil and cook uncovered for about five minutes - or until the potato is tender.
  • Reduce heat to low and add in the remaining ingredients: beans, kale, pepper. Cover with a lid and let simmer for at least five minutes.
  • Serve warm.

Notes

vegan sausage: Any flavor of Field Roast will work. You could also use GimmeLean, and add small pieces to the stew. You could also sub with pasta or rice.
