This cozy vegan sausage, potato, bean and kale soup is perfect for a nourishing lunch of dinner. Fast and easy.

Ingredients
3tablespoonextra virgin olive oil
5clovesgarlicchopped
1smalloniondiced
3cupsvegetable broth
3tablespoonnutritional yeast
1bay leaf
1cuppotatodiced
1carrotchopped
1vegan sausage, slicedoptional
½bunchkalechopped
12oznavy beanscanned
¼teaspoonblack pepper
cayenne to tasteoptional for heat
Instructions
Add olive oil to soup pot. Turn heat to medium. When oil is hot, add garlic and onion. Stir and saute for a minute or two.
Add in the broth, yeast, potato, carrot, vegan sausage and bay leaf. Bring to a low boil and cook uncovered for about five minutes - or until the potato is tender.
Reduce heat to low and add in the remaining ingredients: beans, kale, pepper. Cover with a lid and let simmer for at least five minutes.
Serve warm.
Notes
vegan sausage: Any flavor of Field Roast will work. You could also use GimmeLean, and add small pieces to the stew. You could also sub with pasta or rice.
