- 2 whole apples medium
- ½ cup water
- 1-2 whole lemons squeezed
- 1 tablespoon maple syrup
- 1 tablespoon vegan butter
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla extract
- salt to taste
Prep apples by dicing, skin on. Make the chunks large enough to keep their shape.
Add apples and water to small sauce pan. Turn heat to high and cover pan with lid. Simmer for 3-5 minutes, depending on how tender you want your finished apples. Softer apples: five minutes. Tender and kinda crunchy: 3 minutes.
Remove lid and drain any excess liquid from the pan. Don't toss this! Drink it! It's basically fresh apple juice.
Now add in the lemon juice, maple, cinnamon, vegan butter, salt and vanilla. Stir gently and place back on heat.
Turn heat to medium and simmer - uncovered - for two additional minutes.
Turn off heat and serve! Let rest for a few minutes to cool before eating.
