Simple Summer Tomato Salad
Ingredients
- 4 cups cherry tomatoes, mixed colors
- 2 tablespoon extra virgin olive oil
- ¼ cup fresh lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- fresh herbs, to taste - basil, parsley, dill
Instructions
- Quarter your tomatoes. Rinse any excess seeds.
- Add evoo, lemon, salt, pepper and any fresh herbs to a large mixing bowl. Add tomatoes. Toss well. Optional: Allow to marinate for 10-20 minutes to soften tomatoes a bit and marinate with flavor.
- Pour mixture into a serving dish. Serve! Delicious with warm crusty bread as a side so you can dip up all that yummy marinade.
