Sweetest Little Vegan Snack Bagels..

These "sweetest little vegan snack bagels" are simple: cream cheese, jam and pumpkin seeds. They are the perfect weekday breakfast or weekend brunch centerpiece. As simple or fancy as you want them to be, they offer up sweet and savory flavors in every plant-based, nutrient-dense bite.

Guess Who’s Back… Back Again?

Well… guess who’s back? Back food blogging again? Or maybe it’s just a fluke... Time will tell, guys.

New Light. New Space.

This morning I woke up in my new house, looked around, saw the gorgeous morning light pouring into my kitchen, and all I wanted to do was take food photos. I honestly can’t remember the last time I felt that way, and it made me ridiculously happy.

If you’re a food photographer, you probably already know exactly what I’m talking about. And if you’ve ever thought, “Light is light. Just use studio lights.” Well… you’re probably not a food photographer.

(And yes, the Target bonze horse was a good buy.)

Don’t get me wrong, I have absolutely nothing against studio lighting. I have bins of LED lights and fancy filters in my storage closet. You can create beautiful, consistent, magazine-worthy photos in a studio, and honestly it’s a whole lot more dependable than chasing the sun around your house all day. But there is just something about beautiful natural light that, in my opinion, can’t quite be replicated.

It always surprises you when it pops up.. at a cozy little neighborhood café where the morning sun pours through the giant front windows and suddenly your soy milk latte looks like the most beautiful thing you’ve ever seen. It’s sitting outside on vacation when the light hits your buffet breakfast just right, and suddenly you're snapping fifty photos of sliced papaya. It’s your own kitchen table at exactly the right hour of the day when even a bowl of blueberries becomes irresistible.

That’s the thing about food photography. It isn’t really about the food.

Well… it is. But it also isn’t.

It’s about the beauty of food. The colors. The textures. The steam rising off a hot latte. The glossy, thick jam. The vibrant blueberries. Purple berry stains. Crumbs and sprinkles. The little imperfections that somehow make everything feel even more beautiful. Sometimes I think people assume food photographers just really love cooking, and sure, a lot of us do. But for me it’s always been more about the art.

I love photographing plants.Photographing fruits and vegetables. I love photographing plant-based food because it’s naturally colorful and vibrant and full of life. When the light is beautiful, I just want to put food in it and start creating.

For a while I honestly wondered if that part of me had disappeared. Motherhood has, without question, become the biggest and best part of my life, but photography quietly took a very, very, very far back seat. That’s just what happens sometimes. Life changes, priorities shift, and creative passions wait patiently in the background. This morning reminded me that mine is still there. Maybe it was just waiting for the right kitchen.

Summer Mornings: What to Eat?

After I dropped Rosalie off at camp, I came home and stood in front of the refrigerator having my usual breakfast debate. I wanted something savory, but I didn’t want anything heavy. Something fresh and plant-based and healthy. I wanted fruit, but I didn’t want breakfast to taste like dessert. I wanted something that would actually keep me full and energized without feeling like I had eaten a giant brunch.

So I grabbed a few mini bagels from the freezer, some vegan cream cheese, a jar of mixed berry preserves, and a handful of pumpkin seeds. That was it. Five minutes later I had this sweet little breakfast that honestly felt way fancier than it had any right to. It’s one of those recipes that’s almost too simple to call a recipe, but somehow that’s exactly why I love it. It’s easy enough to throw together on a random weekday morning, but pretty enough that you could absolutely serve it at brunch with friends.

Homemade Version 2.0

Of course, if you’re feeling a little Martha Stewart, you can absolutely take this up a few notches. Homemade bagels? Amazing. Homemade berry jam? Even better. Homemade vegan cashew or cream cheese? I have those recipes too.

Vegan Cream Cheese, Jam & Pumpkin Seed Bagels

These Vegan Cream Cheese, Jam & Pumpkin Seed Bagels are the perfect balance of sweet and savory. Toasted bagels are layered with creamy vegan cream cheese, rich berry preserves, and crunchy pumpkin seeds for an easy breakfast or brunch that feels surprisingly elegant.

Ingredients

  • 2 mini bagels, sliced in half (or 1 full-size bagel per person)
  • 4 tablespoons vegan cream cheese, such as Violife
  • 4 tablespoons mixed berry preserves or berry jam
  • 2 tablespoons raw pumpkin seeds, pepitas
  • 1 cup fresh blueberries

Instructions

  • Toast bagels.
  • Spread on cream cheese. Then jam.
  • Sprinkle pumpkin seeds over top. And any additional toppings - see notes.

Even Fancier..

You could finish everything with fresh mint, parsley, flaky Maldon sea salt, cracked black pepper, lemon zest, a drizzle of good olive oil, or even a little maple syrup if you want to lean sweeter. Fresh peaches would be incredible this time of year, and honestly almost any fresh fruit works beautifully alongside these little bagels.

As for the pumpkin seeds… don’t skip them. They add the perfect little crunch and a nice boost of plant-based protein. If you want even more staying power, you could add a Just Egg patty on the side - or even tuck one right into a bagel for a sweet-and-savory breakfast sandwich. It sounds a little unexpected, but trust me, it totally works.

Sweet Little Snack Bagels

Ingredients

  • Mini bagels (or full-size bagels)
  • Vegan cream cheese (I love Violife.)
  • Mixed berry preserves or jam
  • Pumpkin seeds
  • Fresh blueberries or other seasonal fruit

Directions

Toast your bagels until lightly golden. Spread each one generously with vegan cream cheese, spoon over your favorite berry preserves, and finish with a generous sprinkle of pumpkin seeds. Serve with fresh fruit and a frothy oat milk latte, then find the sunniest spot in your house and enjoy every bite.

And one last thing…

If you noticed things look a little different around here… yes, we moved. I’m not quite ready to share the whole story yet, but I promise I will. For now, I’ll just say this: this house has the most beautiful natural light, and this morning it reminded me of a part of myself that I thought I had maybe lost somewhere along the way. Turns out it was still there all along. It was just waiting for the right light.

And a bowl of crystal fairy wands that my daughter made - and a vase of IKEA-found fake flowers that she also arranged ... to greet me every morning.
